Light Orange:  EX-Cancelable
Blue: Jump Cancelable
Red: Recovery
Yellow: ?
Green: ?

I know this is correct:
Red: Not cancelable
Red/Light Orange: EX cancelable

I think this is correct
Green: special cancelable
Blue: Shield cancelable

However, partial bars make this notation incorrect:
For C-Ryougi:
421b is Green/Light Orange/Red on hit/block/shield and it's only jump cancelable.
6c is Yellow/Red/Green and it's special cancelable, EX cancelable, and has a command followup
For C-Ciel:
4b is Red/Green and it has a command followup, is special cancelable, and is EX cancelable.
j.236c is Yellow/Red/Yellow and I don't think it's cancelable at all.

Green: Cancelable. Depending on which side of the bar it's on, it can mean different things. Left = Normals, Right = Specials. If it's a full bar you can do both.

Blue: Empty cancelable into usually anything. Usually seen on 5A and 2As, but also on things like Warc's j.214B.

Light Orange: EX-cancelable.

Yellow: Now for this one, I've always been confused by it and I still somewhat am. It seems to mean different things for certain moves. I actually think it has something to do with properties only on hit. Take C-Warc's 6C for example, it has yellow at the far right of the status bar for a brief period near the end frames of the move. You can chain here on hit, but not on block.

You should check Sp00ky's stream archive.  He did an explanation of training mode once that has all this information iirc
