I never see that blonde in the anime of tsukihime.

That's because theres not such thing as a Tsukihime anime

Nanako (a.k.a. Seven, a.k.a. Seventh Holy Scripture), technically she appears in everything Ciel does since she is the weapon/combat outfit.

That is 'Nanako'. She has no 'official' name. She is the 'vessel' that houses the Seventh Sacred Scripture of the Church, so Ciel calls her "Seven". Since her sacrificial death, Ciel has been the first master of her's with enough spiritual power to allow her to materialize into a bodied form. Normally, the Seventh Sacred Scripture is embodied by the massive gun-cannon that Ciel wields when activating her Arc Drive. Additionally, due to the level of her magical ability and her ability to manipulate it, Ciel typically 'wears' 'Seven' as her normal black Church gown. This is why the girl morphs shape and then Ciel has her outfit in Melty Blood.

In Kagetsu Tohya, Inui Arihiko finds an 'abandoned' 'Seven' after her and Ciel got into a fight and he takes her home. He than names her 'Nanako' and calls her such (when he's not calling her 'horse'). She likes carrots. She respects her master, Ciel, but is simultaneously scared of her.
